What is a NaughTEA - Tea Cocktail?

Our quirky friends at The Cricklade Club have created this NaughTEA cocktail, but there’s nothing naughty about it. They describe it as a boozy ‘Liqueurious Tea, fresh, light and zesty.’ It’s perfectly balanced where tea meets peach and to be enjoyed whilst sat in your favourite deck chair ‘chilling with your mates’. It’s a summer vibe thing.....

For this cocktail we’ve kept our tea choice to an english breakfast. Steeped quickly to reduce the bitterness from the tannins and to balance the caffeine, flavour and aromas from our Camellia Black Tea Liqueur.

Recipe

  • 50ml Camellia Black Tea Liqueur
  • 50ml Peach Schnapps
  • 150ml English Breakfast Tea
  • 1 tbsp Honey
  • 1 tbsp Freshly squeezed lemon juice
  • Handful of ice
  • Sugar for glass rim
  • Lemon slice to garnish

Tools

  • Glass - Short stemmed wine glass/goblet/highball, which is perfect for wrapping your hand around and better balanced when placed on a freshly mowed lawn.
  • Cocktail Shaker - There are a number of different cocktail shakers you can use. I personally use a Cobbler Shaker which is a household favourite. Some say for novices but frankly when you have an all in one solution which is made of stainless steel, it’s my go to cocktail shaker. It has a built in strainer and a cap which can be used as a jigger (the cap is a standard 1oz/30ml size). The two other cocktail shakers to consider are Boston and French/Parisian, each with their individual pros and cons.
  • Jigger - Bartending tool/dual ended cup for measuring spirits that is normally dual ended (50ml/25ml)

Method

Steep the loose tea/tea bag in boiling water before hand. We recommend 1 tea bag/3g loose tea per 150ml of hot water (or to taste). Quickly steep your loose black tea/tea bag for 20 seconds (or to taste) and cool. We're reducing the amount of natural tannins by quickly hot steeping the tea, as we’re aiming for a rounded smoothness to the tea.

Place ice into the cocktail shaker and pour over all ingredients and shake. Run the lemon slice around half of the glass rim and dip glass into the sugar, so half the rim is sugared. Gently pour into the glass adding 2/3 ice cubes and lemon slice.
